When you have a field defined which you need to assign to an existing variable, the field name does not get changed.
Good programming standards should require that fieldnames match the contents of the field, so if the Form field has the default name and caption, then when setting the associated variable, the Name and caption should be set.
This happens when 'Right-Clicking' a field to add a variable.
This should also be applied to columns in Grids.

I'm not sure I like the idea of changes being made to filed naming when assigning BO variables - that has the potential I think for some undesirable side effects.
That said, I believe that you can do what you're looking for anyway. You've already mentioned that you can create and assign new variables to fields, that covers the issue where the variable did not previously exist. You can also drag fields to forms from existing BO variables and this will give you the naming you desire. This applies to grids as well. You can drag single or multiple fields and get grids or collections of controls which I think is the quickest way of populating forms.
