I haven't yet done my install yet of version 9. Presently my company is still running SQL Server 2005. I want to know if I can still install BPM 9.1 with 2005 or if we have to get a 2008 server going?

That will be fine.
From our Support Environment's documentation for BPM 9.1:
Database Management System Servers
The Metastorm BPM database is supported running on the following Database Management
Systems:
•SQL Server 2005 SP4 x86
•SQL Server 2005 SP4 x64
•SQL Server 2008 SP1 x86
•SQL Server 2008 SP1 x64
•SQL Server 2008 R2 x86
•SQL Server 2008 R2 x64
•Oracle 10G R2 (10.2.0.4 client and server)
•Oracle 11G R1 (11.1.0.7 client and server)
•Oracle 11G R2 (11.2.0.1 client and server)
Oracle 10G R2 client is not supported with the Metastorm BPM Repository Migrator.
